Holiday Peppermint Fudge Recipe

December 8, 2020 by Rachel 5 Comments

Confession: I am not a big fan of chocolate. In fact, I kind of don’t much care for it at all. But I do, however, love peppermint. And I love making chocolate goodies for my friends and family. And what more perfect holiday treat than crafting the perfect-for-gifting and perfect-for-eating delicious holiday Peppermint Fudge Recipe!?

Delicious Holiday Peppermint Fudge Recipe

Why fudge?

When I said I’m not a fan of chocolate, I mean that in the candy bar and peanut butter cup kind of way. If I eat sugar, it’s the candied variety. You know — red licorice, sweet tarts, and all that jazz. But when my husband and I first started dating we had a chocolate tasting with a local chocolatier. She emigrated from Croatia to the United States in the late 1980s and brought all of her expertise on specialty chocolate and candy making with her. Because of her, I became a fudge convert.

Delicious Holiday Peppermint Fudge Recipe

Fudge isn’t just chocolate. It’s sugar, butter, milk, and chocolate combined to make the most perfect texture. Also? Peppermint is the most beloved flavor in all of Christmas. Heck! I wish peppermint would be a year-round staple in all desserts. In fact, I’m about to petition for Peppermint Ice Cream year round! Who’s with me?!

What you’ll need to make Peppermint Fudge

For The Chocolate Layer

  • 2 cups semi-sweet chocolate chips
  • 14 ounce can sweetened condensed milk
  • 2 teaspoon of vanilla

For The Peppermint Layer

  • 2 cups of pink melting chocolate (or white chocolate chips)
  • 14 ounce can of sweetened condensed milk
  • ½ teaspoon of peppermint extract
  • 1 teaspoon of vanilla

For The Topping (optional)

  • Crushed candy canes
  • Mini chocolate chips
Delicious Holiday Peppermint Fudge Recipe

Other than these ingredients, this recipe is basically easy peasy. There is no candy thermometer, no special gadgets (like my beloved Instant Pot). Just simple, no fuss, no nonsense ingredients and delicious Peppermint Fudge!

How to make Peppermint Fudge

Yield: 2 pounds

Peppermint Fudge

Peppermint Fudge
Prep Time 15 minutes
Additional Time 3 hours
Total Time 3 hours 15 minutes

Ingredients

Chocolate Layer

  • 2 cups semi-sweet chocolate chips
  • 14 ounce can of sweetened condensed milk
  • 2 teaspoons of vanilla

Peppermint Layer

  • 2 cups pink melting chocolate (or white chocolate chips)
  • 14 ounce can of sweetened condensed milk
  • ½ teaspoon of peppermint extract
  • 1 teaspoon of vanilla

Topping (optional, but recommended)

  • Crushed candy canes
  • Mini chocolate chips

Instructions

Begin by preparing the chocolate layer. Combine the chocolate chips and sweetened condensed milk in a microwave-safe bowl.

Heat in the microwave for 30 seconds. Stir and repeat. When the chocolate chips are almost melted, keep stirring them so they finish melting. You don’t want to overheat the mixture.

Add in the vanilla and stir. Pour into an 8x8 inch pan that has been lined with parchment paper.

Combine the pink melting chocolate along with the sweetened condensed milk in a microwave-safe bowl. Heat for 30 seconds in the microwave and stir.

Continue the process until chocolate is almost entirely melted, then keep stirring. Once melted, add in the peppermint extract and vanilla and mix again.

Pour over chocolate layer.

Sprinkle crushed candy canes and mini chocolate chips on top.

Let the fudge set up for 3-6 hours at room temperature or 2-3 hours in the fridge.

Notes

  1. The semi-sweet chocolate layer will be pretty thick. This is totally normal.
  2. The pink layer is going to be fairly thin and runny but will set up as it sits.
  3. Feel free to swap out the pink candy melts for any other color or simply use white chocolate chips.
  4. You can add chopped candy can to the fudge mixture if you want.

Instant Pot Grinch Truffles

December 6, 2020 by Rachel 11 Comments

“Maybe Christmas (he thought) doesn’t come from a store. Maybe Christmas perhaps means a little bit more.” — The Grinch. Honestly, friends, I know things have been difficult for all of us lately. I know that we all feel like perhaps our hearts have grown larger and also more exhausted. And I think that’s exactly why I’m being extra celebratory this year. We could all use an extra dose or two of cheer. And what better way to bring smiles to those you love with Instant Pot Grinch Truffles!

Instant Pot Grinch Truffles

Confession: I used to be a grinch!

In my thirty-plus years of life I have always loved Thanksgiving the most of all holidays. But having kids has changed me in a major way. I’m no longer a Christmas Grinch! In fact, I absolutely adore this time of year. Bring on all of the holiday cheer, the magic of Santa, and the adorable Christmas movies — just like The Grinch!

Additional Time 20 minutes
Total Time 1 hour 30 minutes

Ingredients

  • 1 box Devil’s Food Cake
  • 3 large eggs
  • 1/2 cup vegetable oil
  • 1 cup of water
  • 4 tablespoon of cream cheese frosting
  • 6 squares of white baking chocolate
  • Green food coloring
  • 35 Red heart sprinkles

Instructions

Make the box of cake per the instructions on the back of the boxed mix.

Lightly grease a springform cake pan with cooking spray. Pour in your cake mix.

Cover with aluminum foil.

Place 1 1/2 cups of water inside the Instant Pot. Place the trivet inside the inner pot. Then place your cake pan inside your inner pot on the trivet.

Set your Instant Pot to high pressure for 50 minutes. Once the time is up, press cancel, and do a manual release.

Remove the cake pan and transfer to a cooling rack. Allow to completely cool.

Once your cake has completely cooled, place the contents in a large bowl and crumble.

Add in your frosting to the cake.

Mix well.

Using a cookie scoop, or a small spoon, grab a small amount of the cake mix. Roll the cake mix between the palm of your hands to form a ball. Place on a cookie sheet with parchment paper, and place in the freezer for 15 minutes.

In a medium sized bowl, melt your baking chocolate in the microwave for 30 second intervals until completely melted.

Add in your green food coloring to melted chocolate until desired color.

Remove your cake balls from the freezer. Dip each ball in your green chocolate. Coat completely, and transfer to a parchment paper to allow the chocolate to harden. Immediately place one heart sprinkle on the top of each truffle before the chocolate hardens.

Hot Cocoa Bombs Recipe

November 29, 2020 by Rachel 13 Comments

It’s the most wonderful time of the year! Before I became a mom, Thanksgiving was my favorite holiday of the year. But there’s something extra magical that comes from being a mom during Christmastime. It’s now my absolute favorite holiday season. Between wrapping gifts, decorating the tree, and watching Christmas movies with hot cocoa, it’s simply magical. And despite 2020’s challenges, this year did bring us something fabulous — hot cocoa bombs. And that’s why I am sharing this super easy and yummy hot cocoa bombs recipe!

Because, why not?

For a lot of people, this year has been THE worst. Don’t get me wrong, this has not been ‘the worst’ for me. Extremely challenging and totally not at all what I expected. But also I’m leaning into the things that I can. And if that means making my kids super happy by making hot cocoa bombs, well, so be it!

Hot Cocoa Bombs Recipe

Also? They’re like super freaking easy to make. So why the heck not?!

What you’ll need to make hot cocoa bombs

You don’t need much to make some bomb hot cocoa bombs (see what I did there? 😛 ). Besides semi-sweet chocolate chips, vegetable oil, hot cocoa powder, and marshmallows, you’ll need a mold like this one. Oh! And be sure you have milk on hand!

Oh, and enough freezer space to fit the molds while they cool!

Hot Cocoa Bombs Recipe

How to make Hot Cocoa Bombs of your own

Yield: 6 cocoa bombs

Hot Cocoa Bombs

Hot Cocoa Bombs
Prep Time 5 minutes
Additional Time 20 minutes
Total Time 25 minutes

Ingredients

  • ½ bag (6 oz) semisweet chocolate chips
  • 1 Tablespoon of vegetable oil
  • 6 Tablespoons of hot chocolate powder (more or less depending on your preference)
  • approximately 24 mini marshmallows (more or less depending on your preference)

Instructions

  1. Melt your chocolate chips and oil in a medium sized bowl in the microwave for 30 second intervals until completely melted.
  2. Add your chocolate to the hot cocoa bomb mold. Make sure every part of the circle is covered in chocolate. Also try to make the chocolate coating thick as it could break the thinner the layer of chocolate is.

  3. Freeze your mold and chocolate.
  4. Once the chocolate has hardened, remove from the mold.
  5. Fill one half of the mold with your marshmallows and hot chocolate powder.
  6. Warm a small plate in the microwave for 30 seconds. Take the other half of the bomb and twist your hand from left to right. The chocolate will start to melt on the edges.
  7. Place the two rounds together. The round that was melted on the edge will act as a sealant and melt the chocolate together to form a round ball (bomb) shape.
  8. Place in your favorite mug, pour hot milk over it, watch the magic happen, and enjoy!

I’m absolutely OBSESSED with these! And so are my kids. To be honest, I’m not even that big of a fan of hot cocoa. But something about these hot cocoa bombs is just magical.

I hope that you’ll find that these bring some joy to your life this year!

Easy Skillet Turkey Pot Pie Recipe

November 23, 2020 by Rachel 12 Comments

Thanksgiving week is finally here. And, if you’re anything like me, you might already be thinking “What am I going to do with all of these recipes?!” I’ve already given you one option here, but how about something easy that the whole family will enjoy? My Skillet Turkey Pot Pie recipe is out of this world delicious and easy. Basically, the best of both worlds!

What you’ll need for this recipe

This recipe is much easier than you might think. I know how much work can go into a pot pie. They can be majorly labor intensive — especially if you’re making crust from scratch. But bonus points for this recipe! Instead of using crust, it uses biscuits (also? biscuits are way better than crust, in my humble opinion).

I use our cast iron skillet like this one, but you can use any skillet for this recipe. As far as ingredients, here is what you’ll need for Skillet Turkey Pot Pie:

  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 1 large yukon gold potato, cubed
  • 2 cups frozen peas and carrots
  • 1 teaspoon garlic powder
  • ¼ teaspoon dried thyme leaves
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 3 cups leftover turkey breast, cut into bite-sized pieces
  • 4 tablespoon butter, divided
  • 4 tablespoon all-purpose flour
  • 2 cups chicken broth
  • 12 raw biscuits, frozen, canned, or homemade

How to make Skillet Turkey Pot Pie

  1. Preheat the oven to 400 degrees.
  2. In a large (12 inch) skillet over medium heat, add the olive oil and onion.  Cook for about 3 minutes, stirring often, or until softened.
  3. To the onion, stir in the potato, peas, and carrots, seasonings, turkey, and 4 tablespoons of butter.  Allow the butter to melt.
  4. Sprinkle the flour over the contents of the skillet and stir to combine.  Cook about 2 minutes before slowly adding the chicken broth, stirring and scraping the bottom.  Reduce the heat to low and allow to bubble for one minute as it thickens.  Remove from heat.  .
  5. Cover the skillet with the biscuits.
  6. Place the skillet in the oven and bake for 25 to 30 minutes or until the biscuits are golden brown.
  7. Allow the turkey pot pie to rest for 5 minutes prior to serving.

Instant Pot Copycat Starbucks Cake Pops Recipe

October 28, 2020 by Rachel 20 Comments

Hiiiiii… my name is Rachel and I am kinda, sorta, obsessed with cake pops. It’s true. Once, my ‘true love’ was cupcakes. But nowadays it’s those perfect little bite-sized perfections of dessert — cake pops. And, of course, I love my local pop-maker, I sometimes just like to spoil my kids with this homemade Instant Pot Copycat Starbucks Cake Pops Recipe.

Instant Pot Copycat Starbucks Cake Pops Recipe

Why the instant pot for cake pops?

If you’ve experimented with the Instant Pot you’ll know — pressure cooking any food — entree or dessert — makes it super moist and extra delicious. Pressure cooking holds the moisture of food and creates an extra boost of flavor. I could seriously use my Instant Pot for everything.

pop

Also, cake pops are expensive. Like, they can be really expensive — especially with three kids who want (at least) one! But making them in the Instant Pot? So incredibly inexpensive. I mean, I more than get my use out of my Instant Pot, especially with all of the dinners I make in it. But the other items, I mostly have on hand (minus the sticks

What you’ll need for this recipe:

For the cake:

1 cup butter, room temperature
2 cups granulated sugar
1/2 cup vegetable oil
4 eggs
2 tablespoons vanilla extract
2 teaspoons baking powder
1 teaspoon kosher salt
3 cups flour
1 cup milk

For the chocolate coating:

cake pop process

6 blocks of Almond Bark (12 oz)
1 tablespoon vegetable oil
1/2 container cream cheese frosting
1 drop pink gel food coloring
70 Treat sticks
1 package white round sprinkles

How to make Instant Pot Copycat Starbucks Cake Pops

How to make the cake

  1. In a large bowl, beat together your sugar and butter. Mix until incorporated.
  2. Next add in your oil, eggs, vanilla, baking powder, and salt. Mix until incorporated.
  3. While alternating, in your flour and milk a little bit each time. Mix until incorporated.
  4. Prepare your instant pot spring form cake pan by placing Parchment paper on the flat plate. Put the springform pan on top of it and close shop. Remove any remaining parchment that is sticking out using scissors or ripping it off. Spray with cooking spray, or grease with butter.
  5. Fill your pan 3/4 of the way with the batter.
  6. Fill your instant pot with 2 cups of water. Placed the trivet inside and place your cake on top of the trivet.
  7. Close the lid on your instant pot and make sure that the ceiling valve is closed and facing away from you. Set your instant pot to 45 minutes.
  8. Once your instant pot has finished cooking, do a manual released by pulling the ceiling valve towards you to remove any pressure.
  9. With a towel or hot pads, pull the trivet out of the instant pot using the two handles. Transfer to cooling sheet and allow the cake to completely cool.

How to make the chocolate coating

  1. While your cake is cooling, add in a small bowl together your Almond bark and 1 tablespoon of oil. Microwave for 30 second intervals, stirring each time. Make sure that your chocolate is completely melted.
  2. Add one small drop of pink food coloring to your chocolate mixture. Stir well.
  3. Add your cake to a large bowl as well as your frosting. Mix well.
  4. Using a cookie scoop, or eyeballing the size ball that you want, using the palm of your hand, form a round ball. Line each one of your cake balls on a cookie sheet.
  5. Once this is done, transfer your cake balls to the freezer for about 15 minutes too hard and slightly and cool.
  6. After the 15 minutes, remove the cake balls. Taking a treat steak, dip it slightly in your chocolate. This will help it stay in the cake pot.
  7. Dip your cake pop in the chocolate and cover it completely. Give it a few seconds to drip off any excess chocolate into the bowl.
  8. I used a cake pop decorating stand, but you can use even a block of Styrofoam to place the stick in to stand on its own while the chocolate dries and solidifies. Immediately add your sprinkles before the chocolate dries.
  9. Continue and repeat until you have made all your cake pops! Enjoy!
