I don’t know about you, but I am beyond grateful that things in my life are starting to pick up a bit. While I certainly enjoyed the stay-at-home life, we are embracing a busier schedule. But, with a busier schedule comes a more complex dinner situation. So, once again, I’m looking for quick and easy recipes. And these sheet pan cilantro lime shrimp tacos are so good and perfect for busy weeknights!
What you’ll need to make this recipe
You don’t need any fancy gadgets for this meal! As much as y’all know I love my Instant Pot, all you need is a sheet pan for this recipe. Well, and a few ingredients.
Here are all of the ingredients you’ll need for this delicious meal!
- 12 ounces of raw shrimp, peeled
- 6 tortillas
- red onion
- minced garlic
- cilantro
- olive oil
- avocado
- limes
- shredded cabbage
- cumin
- mayonnaise
- garlic powder
- a tiny bit of hot sauce!
Fresh ingredients work the best for this meal. Meaning, fresh squeezed limes and fresh minced garlic make this the tastiest! The best part is that this is a one-pain recipe. Less clean up means that this mama is far less stressed after dinner!
How to make Sheet Pan Cilantro Lime Shrimp Tacos
Sheet Pan Cilantro Lime Shrimp Tacos
Super easy and quick Sheet Pan Cilantro Shrimp Tacos!
Ingredients
- 12 ounces of raw shrimp, peeled
- 6 tortillas
- 1 cup of cilantro, chopped
- 1/2 of a red onion
- 1/2 of an avocado
- 4 limes
- 1/2 cup of shredded cabbage
- 2 tablespoons of minced garlic
- 1 tablespoon of olive oil
- 1 teaspoon of cumin
Sauce
- 1/2 cup of mayonnaise
- 1 teaspoon of salt
- 1 teaspoon of garlic powder
- 1 tablespoon of hot sauce
- 1 teaspoon of cumin
Instructions
INGREDIENTS -
STEP 1 -
In a bowl, add the juice of the 3 limes, Minced garlic, 1/4 cup of cilantro, cumin, and 1 tablespoon of oil
STEP 2 -
Add shrimp to marinade and place in the refrigerator for 30 minutes.
STEP 3 -
In another bowl, mix the mayonnaise, salt, garlic powder, cumin and hot sauce. Set aside
STEP 4 -
To make slaw, add cabbage, thinly sliced onion, 1/2 cup of chopped cilantro, and juice of one lime. Set aside.
STEP 5 -
Dump the bowl of shrimp and marinade on a baking sheet. Bake on 350 for 10 minutes.
STEP 6 -
To assemble tacos, place slaw on the tortillas, then add 4-6 pieces of shrimp, top with sauce and cilantro for garnish.
STEP 7 -
