Easter is just around the corner and I’m always looking for creative ways to celebrate. I’ve been forthcoming about the fact that I’m not a big fan of chocolate. In fact, I can usually go without. With one exception — brownies! Brownies are basically the only chocolate I LOVE. Scratch-made brownies are the greatest. You will LOVE these mini Easter egg brownies! Perfect in every way. And an easy way to add a snack to your Easter festivities.
What You’ll Need
This recipe will have you wondering why you ever made boxed brownies. One item that will give you a little assistance is using either a hand mixer or a stand mixer. Here’s what else you’ll need:
- 3 large eggs
- ¾ cup of unsalted butter, melted
- ¼ cup of vegetable oil
- 2 teaspoon of vanilla extract
- ½ teaspoon of salt
- 1 cup of granulated sugar
- ¼ cup of light brown sugar, lightly packed
- ½ cup of cocoa powder
- ¾ cup off all-purpose flour
- ¾ cup of Cadbury mini eggs, roughly chopped
- ¼ cup of semi-sweet chocolate chips

How to make Mini Easter Egg Brownies
Mini Easter Egg Brownies
Ingredients
- 3 large eggs
- ¾ cup of unsalted butter, melted
- ¼ cup of vegetable oil
- 2 teaspoon of vanilla extract
- ½ teaspoon of salt
- 1 cup of granulated sugar
- ¼ cup of light brown sugar, lightly packed
- ½ cup of cocoa powder
- ¾ cup off all-purpose flour
- ¾ cup of Cadbury mini eggs, roughly chopped
- ¼ cup of semi-sweet chocolate chips
Instructions
- Preheat oven to 350° Fahrenheit.
- In a stand mixer or a large mixing bowl add in the eggs, butter, vegetable oil, and vanilla extract.
- Using the whisk attachment or a hand mixer, beat until fully mixed.
- Add in the salt, sugars, and cocoa powder mixing until well incorporated.
- Slowly add in the flour in ¼ cup increments, mixing in between each increment.
- Once all the flour is well incorporated, add in the mini eggs and chocolate chips.
- Fold the chocolate into the brownie batter.
- Once finished, pour the batter into an oiled 9x9 pan.
- Bake for 30-35 minutes or until fully cooked.
- Check with a toothpick to ensure the brownies are done. If the toothpick comes out clean, they are done!
- Take out of the oven and allow to cool to a desirable temperature.
- Cut, serve and enjoy.
