- 2 pounds of russet or yukon gold potatoes, cleaned
- 1/4 cup of chopped fresh parsley
- 3/4 cup of chicken broth
- 1/2 teaspoon of pepper
- 1 1/4 teaspoon of salt
- 4 tablespoons of butter
- 1/2 cup of milk
- 1/2 cup of sour cream

- Peel and dice potatoes.
- Place diced potatoes into instant pot. Pour in chicken broth.
