I have a confession. I went through most of my life without having had reuben dip. When I met my (now) husband, his family always served it for every get together. With my very first bite, I was. hooked! I mean, how did I go through nearly 25 years of my life without this delicious appetizer?! So it’s my vow to share it with as many people as humanly possible. To prevent you from living your life without reuben dip. If you do one thing this month, I hope it’s that you make this super easy reuben dip recipe.

What You’ll Need
In addition to the ingredients, you’ll just need an oven-safe pan. I like to use cast iron, because I like the flavors that come from using it. But any baking dish will work. Here’s what else you’ll need:
- 8 ounces corned beef (deli), roughly chopped
- 1 cup of sauerkraut, drained well and squeezed dry
- 1 cup of mayonnaise
- ⅔ cup of thousand island dressing
- 4 ounces of chive and onion cream cheese, softened
- 2 cup of swiss cheese, shredded
- 1-2 teaspoon of fresh chives, chopped
- Rye crackers for dipping. Alternatives: blue corn chips or rye bread

That’s it. I would also recommend that you use a good sauerkraut. Cleveland Kraut is our favorite. It can be found at many national retailers.
How to make this Easy Reuben Dip
Easy Reuben Dip

Ingredients
- 8 ounces corned beef (deli), roughly chopped
- 1 cup of sauerkraut, drained well and squeezed dry
- 1 cup of mayonnaise
- ⅔ cup of thousand island dressing
- 4 ounces of chive and onion cream cheese, softened
- 2 cup of swiss cheese, shredded
- 1-2 teaspoon of fresh chives, chopped
- Rye crackers for dipping. Alternatives: blue corn chips or rye bread.
Instructions
INGREDIENTS -
- Preheat the oven to 350 degrees.
- Add the dressing, mayonnaise and cream cheese to a medium bowl and blend using a mixer until fully combined.
- Be sure to squeeze all of the excess liquid from sauerkraut and then add to the bowl along with the chopped meat and 1 ½ cups cheese. Mix by hand until well blended.
- Spray a baking dish with non-stick cooking spray. Add the reuben mixture to your dish and spread evenly.
- Sprinkle with remaining cheese and chives.
- Bake for 25 minutes or until bubbly and golden. Leave in oven a minute or two extra under the broiler to brown cheese further if desired.
- Serve immediately with rye crackers.
