Remember how I said that my idea of cooking is picking up takeout or eating ice cream? Yeah, that’s pretty much true. If I do cook, it’s something that I feel confident I won’t screw up.
So for other amateur chefs out there, I figured I share my go-to weekday recipe [though, be warned, I did screw it up once – but I swear it wasn’t my fault! Our crockpot is a crock. 😛

I promise that unless your crock pot cooks things on high regardless of setting [like ours], you cannot screw this up.
And I recommend pairing this with some of Chad’s Life Changing Guacamole. It offsets the heat from the jalapenos.
So yummy and easy! It’s the perfect weeknight meal that we are quickly working into our rotation of meals. Especially as we find our way through this time of transition!

This is my favorite go to… If we don’t have anything or forgot to even defrost meat, I throw the chix in on low, and kick it up to high the last few hours, and all done. Mango salsa is what I like to add 😉

I’ve made this before though not as spicy bc the hubby doesn’t like heat 🙂 but its so good and so easy!!!!
