There are certain seasons of life when getting dinner on the table feels like an Olympic sport. Fall is definitely one of them. Between school, fall sports, practices, games, meetings, homework, and all the other things that somehow end up on the calendar at the same time, I need dinners that are easy, filling, and something my whole family will actually eat.
This Easy 5-Cheese Rotini Bake has become one of those recipes I can make on a busy weeknight without giving dinner a second thought. It takes just a few simple ingredients, comes together quickly, and gives you a bubbly, cheesy pasta bake that feels like comfort food without requiring a ton of work.
And honestly? Anything I can prep while someone is looking for their soccer cleats or asking me where their water bottle is gets an automatic spot in our dinner rotation. 😂
Why You’ll Love This Easy Pasta Bake
This 5-cheese pasta bake is the perfect combination of simple and comforting. Rotini noodles are tossed with spaghetti sauce, creamy cottage cheese, egg, and plenty of shredded cheese before everything is baked until hot and bubbly.
A few things I love about this recipe:
- It’s easy enough for a busy weeknight.
- It makes enough to feed the whole family, with leftovers depending on your crowd.
- You can use your favorite combination of cheeses.
- It’s a great make-ahead dinner for especially hectic evenings.
- The rotini holds onto all that delicious sauce and cheese.
- It’s cozy, hearty and perfect for fall and winter family dinners.
And because this recipe is so forgiving, you really don’t have to measure every single thing perfectly. Use the cheeses your family loves, grab your favorite jarred spaghetti sauce, and get dinner in the oven.
What Makes This a 5-Cheese Rotini Bake?
The “five cheeses” in this recipe come from cottage cheese plus a combination of shredded mozzarella, cheddar, Parmesan and Monterey Jack.
Of course, you can absolutely change things up! If you don’t have all four shredded cheeses on hand, use whatever you have in the refrigerator. Mozzarella and cheddar are always a great combination, but adding Parmesan and Monterey Jack gives this baked pasta even more flavor and that delicious cheesy, bubbly topping.
Ingredients You’ll Need
Rotini noodles: I love rotini for baked pasta because all those little twists hold onto the sauce.
Spaghetti sauce: Use your favorite jarred sauce to keep this recipe quick and easy.
Cottage cheese: This adds creaminess to the pasta without making the recipe complicated.
Egg: The egg helps bind everything together as the pasta bakes.
Shredded cheese: You’ll need about 2 cups total. I like a combination of mozzarella, cheddar, Parmesan and Monterey Jack.
Salt: Just a tablespoon for the pasta water.
Fresh parsley: Totally optional, but it adds a pretty pop of color when you’re serving.
How to Make 5-Cheese Rotini Bake
Start by bringing a large pot of water to a boil. Add the salt, then cook your rotini for about 8 minutes, or about two minutes less than the package directions. You want the pasta to be al dente since it will continue cooking in the oven.
While the pasta cooks, preheat your oven to 350°F.
Before draining the pasta, reserve ½ cup of pasta water. Drain the rotini and return it to the pot.
Add your spaghetti sauce and reserved pasta water. Here’s a little trick I love: pour the reserved pasta water into your empty spaghetti sauce jars, put the lids back on, and give them a good shake. This gets all those little bits of leftover sauce out of the jar and into your dinner!
Add the whisked egg, cottage cheese and 1 cup of your shredded cheese mixture. Give everything a good stir.
Transfer the pasta mixture to a greased 9×13-inch baking dish and spread it evenly. Sprinkle the remaining cup of shredded cheese over the top.
Bake for about 25 minutes, or until the cheese is melted, bubbly and golden around the edges.
Finish with fresh parsley and a little extra Parmesan if you’d like.
Then serve it up and enjoy!
An Easy Dinner for Crazy Fall Schedules
I especially love recipes like this during back-to-school season and fall sports. When we’re running from school to practices, games, appointments and meetings, the last thing I want to do is spend an hour making an elaborate dinner.
This recipe gives me that homemade, comforting dinner feeling without all the work.
You can even assemble the pasta bake earlier in the day, keep it covered in the refrigerator, and bake it when you’re ready for dinner. Just keep in mind that a chilled casserole may need a little extra time in the oven.
And if your family is anything like mine, don’t be surprised if the leftovers disappear quickly. It’s one of those meals that somehow tastes just as good the next day.
