Easy Reuben Sliders

Easy Reuben Sliders Recipe
Prep Time 15 minutes
Cook Time 20 minutes
Total Time 35 minutes

Ingredients

Sliders

  • 12 Hawaiian Rolls
  • 1 pound of thin sliced corned beef
  • 6 slices of Swiss cheese
  • 1/3 c up of Thousand Island dressing
  • 8 ounces of Sauerkraut, squeezed to get liquid out

Butter Topping

  • ¼ cup of butter, melted
  • ½ teaspoon of parsley

Instructions

INGREDIENTS -

  1. Preheat the oven to 350 degrees and lightly coat an 8x11 or  9x13 baking pan with softened butter.
  2. Slice the Hawaiian rolls in half and place the bottom halves in the prepared baking dish.
  3. Top the buns with Thousand Island dressing.
  4. Add half of the corned beef on top of the Thousand Island Dressing.
  5. Top the corned beef with the sauerkraut.
  6. Add swiss cheese on top of the sauerkraut.
  7. And then add another layer of corned beef.
  8. Place the top half of the rolls over top of the layers.
  9. In a small bowl, mix together the butter and parsley.
  10. Brush the butter mixture evenly on top of the sliders.
  11. Cover the sandwiches in foil and bake for 20 minutes.
  12. Remove foil and bake an additional 3 - 5 minutes, or until golden brown.
  13. Remove from oven and serve warm!

We need to talk about kids and snacks. My kids will hyperfocus on a snack and then eat through it in a day. I wind up spending an ungodly amount of money on a singular snack. Part of me thinks that I can’t complain. I mean, heck, they’re eating! Like with everything, all of this comes in phases. And right now we’re in a Little Bites phase. These kids absolutely cannot get enough of the Little Bites muffins. Specifically, the party cakes. But I’m getting really tired of paying what feels like a hundred dollars for 5 mini muffins. So I did what any mom would do — I made a dupe recipe! These copycat Little Bites Party Cakes Muffins are the perfect dupe. Your kids will never know the difference!

What you’ll need

It’s actually super easy to make these copycat muffins. But you’ll never fool your kids if you use a full-size muffin tin. That’s why you need these mini muffin tins. As for the ingredients themselves, those are easy peasy.

Here’s what you’ll need:

  • all purpose flour
  • baking powder
  • baking soda
  • salt
  • sugar
  • vegetable oil
  • eggs
  • milk
  • vanilla
  • multicolor sprinkles

With just a handful of ingredients, you can easily duplicate the world’s most expensive muffins! — Also, I hope you understand that this is said in jest. But, as parents, we all know that these (absolutely scrumptious) muffins are mega overpriced. So don’t pay for them anymore!

And if you need extra props to convince your kiddos, keep one of those extra bags and throw these in it.

How to make Copycat Little Bites Party Cakes Muffins

Yield: 32-36 muffins

Copycat Little Bites Party Cakes Muffins

Copycat Little Bites Party Cakes
Prep Time 10 minutes
Cook Time 7 minutes
Total Time 17 minutes

Ingredients

  • 2 ¾ cups of all purpose flour
  • 1 tablespoon (heaping) of baking powder
  • 1 teaspoon of baking soda
  • ½ teaspoon of salt
  • 1 ¼ cups of sugar
  • ½ cup of vegetable oil
  • 3 large eggs
  • ½ cup of milk
  • 3 teaspoon of vanilla
  • ¾ cup of multicolor sprinkles

Instructions

INGREDIENTS -

  1. Preheat the oven to 350ºf and generously spray your mini-muffin pan.  
  2. In a mixing bowl, combine the oil, eggs, milk, and vanilla, making sure the eggs are fully incorporated.  
  3. In another separate bowl, whisk together the dry ingredients (flour, baking powder, baking soda, salt, sugar) thoroughly. 
  4. Gradually pour the dry ingredients into the wet mixture, stirring until just combined. Be careful not to overmix—this will lead to dense muffins that don't rise properly. The mixture should be fluffy and moist. Stop mixing once the dry ingredients have dissolved into the wet ingredients. 
  5. Gently fold in the sprinkles until evenly distributed throughout the batter.

  6. Drop ½ to 1 tablespoon of batter into each spot on a mini-muffin pan.  
  7. Bake in the oven for 7 minutes at 350°F (on the middle rack), or until the muffins are fully cooked. You can confirm the cook by the toothpick method.  
  8. Allow the muffins to cool in the pan for 5-10 minutes before transferring them to a cooling rack. Repeat until batter is gone.
  9. Enjoy!

Dear Ari,

I’m not going to say something cliché about the years flying by; because, honestly, as quickly as they do, the days sure are long, dude.

I have to say this though — Going from being a self-proclaimed “never-going-to-have-kids” chick, to finding out I was pregnant with you? That rocked my world. Your daddy and I were lucky enough to have had a lot of really fun times travelling the globe before you came along.

Speaking of me and your daddy, do you know just how much it makes me smile to hear you call me a princess when you look at pictures from our wedding? That doesn’t get old. Keep saying it.

I feel like you’ve grown up so much over the last year. Heck, maybe it’s because now I’m with you 24/7 that I feel that way! I knew being a mom was going to be hard, but I didn’t know just how hard. And then I knew being a working mom would be hard, but I didn’t anticipate just how hard. And even then, I completely, totally, underestimated just how hard it would be to be at home with you (and at work with you) 24/7.

Real talk.

I’ve had blog post after blog post drafted this week. But I can’t sit down and focus for long enough to finish a single one. I’m just so… so…. 

freaking exhausted. mentally drained. physically worn out. and one thousand percent over it. 

I’m not even sure “what” it is that I’m “over.” Because truthfully, most of the time I’m totally okay. 

But ever night, as I sit down for the first time all day, open my computer, and turn the TV on… 

I just can’t function. 

And I’ve avoided thinking about the fact that perhaps I’ve put a little too much on my plate these last 7 months. 

But as I sit here, amid a two-child meltdown on a Friday afternoon, I have to acknowledge that I’ve been keeping myself too scheduled and busy. Especially these last two weeks. 

And my brain needs a break. 

So I’ve been a tad bit quiet around here this week. And I probably will be this weekend, too. 

But the good news is it won’t be because I’m busy. Nope. We have a nearly empty agenda for the weekend (minus a work meeting I have on Sunday!). 

So catch ya on the flip side of the weekend, friends. Enjoy it. ?

After months and months of not feeling like myself… I’m still not feeling like myself. But this morning I’m dragging myself out of bed at a reasonable time (8 am — GUYS! I’ve been sleeping til like 10 am everyday!) and I’m hitting the ground running.

Sure, there may be some speed bumps (frequent bathroom trips to throw up), but in between trips to the bathroom, I’ll get some real ish done! Like dishes. And laundry. And … let’s face it. That’s probably it! Ha!

But seriously. Happy Monday, friends! ♥ ♥

{ Tales From a Working Mom }

I knew my first day back at work would be a mixture of emotions. So I woke up extra early to prepare for my big day back.

Ari + Chad were still sleeping (did I mentioned Ari started sleeping at night?! Hooray!). I started a load of laundry, did the dishes, and prepped my lunch for the day…

I had a lot of things to remember to bring for the day: my lunch, my purse, my badge to get into the building, my parking pass, my breast pump, storage containers for the milk, and my work laptop.

Holy hell.

I looked like I was moving in.

And the fun part? I have to bring that stuff in every single day.

Once I got there, I was kind of amazed at how excited I was to be back at work. My coworkers, the environment, and the sense of purpose. I love my job and I have missed that confident working woman that I am!

And to be honest, everyday since my first has been great!

I swear going back to work and being a mom have both given me a completely different perspective.

Now I know that work may get stressful at times, but there is no stress like taking care of a human being — that is really hard work!

Luckily the work days have been flying by and when I come home and see my little guys big toothless grin, my heart completely melts. Completely!

I’m hoping to keep my new-found perspective as a learn-as-I-go working mama!  I know it won’t always be pretty, but it will be authentic.
