Instant Pot Penne Alla Vodka

This morning I looked at our family schedule for the next two weeks. And, oh my gosh, things are just getting busier and busier. Thanks to apps like google calendar and my handy paper planner, I keep us all semi-organized. But suppertime is still crunchtime around here. Between evening Zoom calls and the rush of getting the kids fed, bathed, and ready to bed, I am always looking for time-savers. And this Instant Pot Penne Alla Vodka is not only timesaving, but delicious.

Why pressure cooking pasta?

I’ve talked about this before, but pressure cooking most foods just gives them more flavor. The flavors are richer because of the fact that when the food cooks, very little moisture escapes. Keeping all of that yummy flavor where it belongs — in your food!

And pasta in the pressure cooker is no different. Think of all of those flavors in your typical pasta sauce. Imagine cooking the dry pasta with the actual sauce! The difference in flavor is unbelievable. Truly, something that needs to be experienced. And that’s why pasta is actually my favorite Instant Pot meal.

What you’ll need to make Instant Pot Penne Alla Vodka

Besides your Instant Pot, you won’t need much else! This recipe is straightforward and easy. Here are the ingredients:

  • 5 links of mild Italian sausage, casings removed
  • 4 tablespoons of minced garlic
  • 1/2 teaspoon crushed red pepper
  • 1 (28-oz) can crushed tomatoes
  • 1 teaspoon of onion powder
  • 3 cups chicken broth
  • ½ cup vodka
  • 1 (16-oz) box mini penne pasta
  • ½ cup heavy cream
  • 1 teaspoon of pepper
  • 1 teaspoon of salt

That’s it! See? Super easy. Simple. Straightforward. And, best part? Delicious!

Ingredients

  • 5 links of mild Italian sausage, casings removed
  • 4 tablespoons of minced garlic
  • 1/2 teaspoon crushed red pepper

  • ½ cup vodka

Instructions

INGREDIENTS -

STEP 1 -

Set instant pot to sauté and toss in the sausage. Chop sausage into bite size pieces while browning.

STEP 2 -

Once sausage is browned, toss in the garlic and cook for 3 minutes.

STEP 3 -

Add the spices, tomatoes, broth, vodka and pasta. Close the lid and pressure valve and pressure cook on high for 5 minutes.

STEP 4 -

Manually release the pressure valve, remove the lid and stir in the heavy cream.

STEP 5 -

Serve once cooled.

Sheet Pan Pancakes

My kids have always been picky eaters. Once they find something they absolutely love, they stick to it. Big time. My eldest loves a bowl of cereal, but that has been an acquired taste. In my 8+ years as a mom, I’ve tried to feed my kids every breakfast food imaginable. But the one thing they always seem to want? Pancakes. And pancakes just so happen to be my least favorite breakfast food to make. Mostly because three kids times three pancakes each means I am standing at the stovetop over a pan for nearly an hour (to make sure there are enough for my husband and I, as well as leftovers). It can be downright daunting! So I got creative. These easy weekday (or weekend) morning sheet pan pancakes are the perfect way to make pancakes for a crowd!

Getting creative and innovative

Listen, every mom has had moments of being at home with their kids at some point in their motherhood journey. But this pandemic took it to a whole other level! Suddenly our kids — and, who am I kidding, we! — are eating 24/7. Grocery deliveries and BJ’s Drive Up orders are now happening twice weekly. It’s basically insanity. And during insanity comes ingenuity. Is that the saying? Probably (most definitely) not, but let’s roll with it.

Weekday Morning Sheet Pan Pancakes

Who would have thought that something as simple as foregoing the griddle could be so life-changing? Okay, perhaps life-changing is a bit dramatic. But morning changing? Totally and completely accurate.

What you’ll need

This recipe is beyond easy peasy. Just grab your favorite pancake mix, water, and some vanilla, and you are good to go! Oh — and a sheet pan. Any old sheet pan will do! Just be sure you grease it (we prefer avocado oil or coconut oil).

Ingredients

  • 3 1/2 cups boxed pancake mix
  • 2 cups of water
  • 2 Tablespoons of Vanilla

Instructions

INGREDIENTS -

STEP ONE -

Preheat your oven to 425 degrees.

STEP TWO -

Mix together your pancake mix, water, and vanilla.

STEP THREE -

On a lightly greased sheet pan, pour in your pancake mix. 

STEP FOUR -

Bake for 15 minutes, or until lightly browned.

STEP FIVE -

Allow it to cool before cutting into it.

STEP 6 -

Cut into 12 servings. Top with butter, syrup, powdered sugar, whipped cream, fresh fruit, and/or more! ENJOY!

Holiday Peppermint Truffles Recipe

We’re nearly a week out from Christmas and I’m still not quite ready. By that I mean that I have all of our gifts purchased; nothing has been wrapped and nothing has been shipped. I have a lot of work left to do. But that won’t stop me from baking up a storm with my littlest loves in an effort to bring some normalcy to this holiday season. And this holiday peppermint truffles recipe is the most perfectly delicious holiday treat!

Holiday Peppermint Truffles Recipe

What you’ll need for this recipe

You’ll need a few pieces of equipment for this holiday recipe. The first of which is either a hand mixer or a stand mixer. I used to have a KitchenAid Stand Mixer, but now I use a KitchenAid hand mixer simply because it takes up less space, storage-wise. But you’ll also need a food processor. If you are in the market for a food processor or blender I highly recommend just getting a Vitamix. The company itself is a awesome because they have an incredible 10-year guarantee on their product. But it is also super versatile.

Holiday Peppermint Truffles Recipe

Besides equipment, you’ll also need:

  • White Cake Mix 
  • 3 eggs 
  • ⅓ cup of oil 
  • 1 cup of water 
  • 1 teaspoon of peppermint extract 
  • Crushed Candy Canes or Peppermints 
  • White Chocolate Melting Wafers, Almond Bark or Candy Coating

How to make this treat

Peppermint Truffles

Holiday Peppermint Truffles Recipe

Ingredients

  • White Cake Mix 
  • 3 eggs 
  • ⅓ cup oil 
  • 1 cup water 
  • 1 tsp peppermint extract 
  • Crushed Candy Canes or Peppermints 
  • White Chocolate Melting Wafers, Almond Bark or Candy Coating

Instructions

Prepare Cake Mix according to box directions. 

Add in the peppermint flavoring to the cake mix. 

Bake the cake according to mix instructions. 

Let the cake cool completely.

Prepare the truffles: 

Place the fully cooled peppermint cake into your food processor on the thickest setting to begin with. Once the cake is broken up and forms crumbs, move the processor down to the smallest setting.

Let the cake mix until it turns into a dough. 

*If your food processor is unable to mix the cake into a dough, let it mix until you can effortlessly squeeze the processed cake into a ball.

 

Using the cookie scoop, roll small, evenly-sized balls of cake dough and let rest on a parchment-lined cookie sheet.  

Prepare the Chocolate: 

Put the white chocolate wafers into a heat safe bowl.

Melt the chocolate in the microwave by melting for 30-second intervals and stirring in between.

Once the chocolate is fully melted you will want to test how fluid it is. The chocolate should flow off a spoon, If it doesn’t it's too thick. Add ½ tsp of vegetable or melted coconut oil to thin out the chocolate until it flows off a spoon. 

Dip all of your cake balls into the melted chocolate. Use the aid of a spoon to scoop them out of the chocolate and tap lightly on the inside rim to release any excess chocolate.  

Place on parchment and allow to harden at room temperature. 

Have sprinkles and or crushed peppermint ready to be added to top of cake truffles while they are still warm and not yet cooled.

The holiday season is nearly upon us. And celebrating with close family and friends in our circle has never been more important. One of the ways that my family and I like to celebrate is with food. There’s something extremely satisfying about making and sharing a meal together. Even better? Sharing all of the leftovers and thinking up fun and creative meals together. My favorite creation is my recipe for Leftover Stuffing “Pancake” Bites!

I try to make things as easy as possible when prepping for the holidays. I do all my holiday shopping at Walmart to stock up on all of our favorites. It’s easy to feed the whole family on a budget! We stock up on Stove Top® Stuffing, Heinz® Gravy, Oscar Mayer® Bacon, and even our Thanksgiving turkey.

What you’ll need for Leftover Stuffing “Pancake” Bites!

The recipe itself is super easy, which you’ll totally appreciate after making a big holiday dinner. The ingredients consist mostly of leftovers. The other items will be ingredients you have on hand anyways (such as eggs). Here’s what you’ll need:

  • 2 cups leftover prepared STOVE TOP Turkey Stuffing Mix
  • 1 cup leftover mashed potatoes
  • 2 eggs, beaten
  • 6 slices OSCAR MAYER Naturally Hardwood Smoked Bacon
  • 4 tablespoons vegetable oil
  • ¼ cup of leftover cranberry sauce
  • 1 tablespoon orange zest or orange juice
  • ½ cup leftover turkey breast, shredded 
  • 1 jar (12 ounces) HEINZ Homestyle Roasted Turkey Gravy, for dipping
  • sprig of parsley as garnish (optional)

Making your Leftover Stuffing “Pancake” Bites!

Every single time I make these “pancake” bites the house smells absolutely incredible! Luckily, they don’t take long to make, so you won’t have to wait long to indulge.

Here are the instructions:

  1. Add stuffing mix, mashed potatoes and eggs to a large bowl. Stir ingredients together with a large spoon until well mixed. 
  2. Cook bacon according to the package directions (or air fry at 400°F for 10 minutes) and then set aside.
  3. Warm 1 tablespoon of oil in a large skillet or flattop over medium heat. 
  4. Using an ice cream scoop or ¼-cup measuring cup, scoop stuffing mixture and drop onto the skillet. Fry for 3 minutes per side or until lightly browned. Continue the process of adding oil and scoping stuffing mixture until all the pancake bites are cooked. 
  5. Heat leftover cranberry sauce in a small saucepan. Add orange zest (or juice) and simmer until heated through.
  6. Assemble pancake bites. Add half a slice cooked bacon to the top of one pancake bite, and top with some shredded turkey (either reheated or cold). Place a scoop of cranberry mixture on top. 
  7. Serve with gravy and enjoy!

Instant Pot Copycat Starbucks Cake Pops Recipe

Hiiiiii… my name is Rachel and I am kinda, sorta, obsessed with cake pops. It’s true. Once, my ‘true love’ was cupcakes. But nowadays it’s those perfect little bite-sized perfections of dessert — cake pops. And, of course, I love my local pop-maker, I sometimes just like to spoil my kids with this homemade Instant Pot Copycat Starbucks Cake Pops Recipe.

Why the instant pot for cake pops?

If you’ve experimented with the Instant Pot you’ll know — pressure cooking any food — entree or dessert — makes it super moist and extra delicious. Pressure cooking holds the moisture of food and creates an extra boost of flavor. I could seriously use my Instant Pot for everything.

Also, cake pops are expensive. Like, they can be really expensive — especially with three kids who want (at least) one! But making them in the Instant Pot? So incredibly inexpensive. I mean, I more than get my use out of my Instant Pot, especially with all of the dinners I make in it. But the other items, I mostly have on hand (minus the sticks

What you’ll need for this recipe:

For the cake:

1 cup butter, room temperature
2 cups granulated sugar
1/2 cup vegetable oil
4 eggs
2 tablespoons vanilla extract
2 teaspoons baking powder
1 teaspoon kosher salt
3 cups flour
1 cup milk

For the chocolate coating:

6 blocks of Almond Bark (12 oz)
1 tablespoon vegetable oil
1/2 container cream cheese frosting
1 drop pink gel food coloring
70 Treat sticks
1 package white round sprinkles

How to make Instant Pot Copycat Starbucks Cake Pops

How to make the cake

  1. In a large bowl, beat together your sugar and butter. Mix until incorporated.
  2. Next add in your oil, eggs, vanilla, baking powder, and salt. Mix until incorporated.
  3. While alternating, in your flour and milk a little bit each time. Mix until incorporated.
  4. Prepare your instant pot spring form cake pan by placing Parchment paper on the flat plate. Put the springform pan on top of it and close shop. Remove any remaining parchment that is sticking out using scissors or ripping it off. Spray with cooking spray, or grease with butter.
  5. Fill your pan 3/4 of the way with the batter.
  6. Fill your instant pot with 2 cups of water. Placed the trivet inside and place your cake on top of the trivet.
  7. Close the lid on your instant pot and make sure that the ceiling valve is closed and facing away from you. Set your instant pot to 45 minutes. 
  8. Once your instant pot has finished cooking, do a manual released by pulling the ceiling valve towards you to remove any pressure.
  9. With a towel or hot pads, pull the trivet out of the instant pot using the two handles. Transfer to cooling sheet and allow the cake to completely cool.

How to make the chocolate coating

  1. While your cake is cooling, add in a small bowl together your Almond bark and 1 tablespoon of oil. Microwave for 30 second intervals, stirring each time. Make sure that your chocolate is completely melted.
  2. Add one small drop of pink food coloring to your chocolate mixture. Stir well.
  3. Add your cake to a large bowl as well as your frosting. Mix well.
  4. Using a cookie scoop, or eyeballing the size ball that you want, using the palm of your hand, form a round ball. Line each one of your cake balls on a cookie sheet.
  5. Once this is done, transfer your cake balls to the freezer for about 15 minutes too hard and slightly and cool.
  6. After the 15 minutes, remove the cake balls. Taking a treat steak, dip it slightly in your chocolate. This will help it stay in the cake pot.
  7. Dip your cake pop in the chocolate and cover it completely. Give it a few seconds to drip off any excess chocolate into the bowl.
  8. I used a cake pop decorating stand, but you can use even a block of Styrofoam to place the stick in to stand on its own while the chocolate dries and solidifies. Immediately add your sprinkles before the chocolate dries.
  9. Continue and repeat until you have made all your cake pops! Enjoy!

The Bratsgiving Polish Boy : A Cleveland Twist

As a foodie, I’m always on the lookout for the daily ‘national food holiday’. It’s a fun and exciting way to switch up meals and meal plan. So I was excited to see that this month we are celebrating National Bratwurst Day (or, as we call it, Johnsonville Bratsgiving) on August 16th. I grew up in the Midwest. And, here in Ohio, we LOVE a sandwich called the Polish Boy. A traditional Polish Boy is made up of kielbasa, topped with french fries, cole slaw, and barbecue sauce, in the middle of a hoagie roll. So why not put a Cleveland twist on Bratsgiving with the Bratsgiving Polish Boy?

Well that’s exactly what I did.

Why Johnsonville Brats?

I personally love the flavor of Johnsonville Bratwurst. The Beer Brats and Original Brats are staples in our house. They don’t take long to grill (or cook on the stovetop) and our whole family will eat them up!

Cleveland is a foodie haven. What was once a rundown city in the rustbelt has turned into a bustling foodie travel destination. We have world renowned chefs, like Michael Symon and Dante Boccuzzi. But we also have critically acclaimed restaurants all over the place. It’s truly an incredible place to live. So why not “Cleveland”-up the Bratwurst?!

What makes it a “Polish Boy”?

A traditional polish boy is on a hoagie bun and topped with coleslaw, french fries, and barbecue sauce. The french fries are a DEAD giveaway to this Cleveland twist. And, in this case, I ended up using both traditional coleslaw and a beet-sauerkraut.

I opted for fresh cut fries, using this knife. While it does make it slightly more labor intensive, it makes the Polish Boys 100x more delicious. My kids, however, are ‘weird’ about crinkle cut fries — so I sliced some string thing fries for them.

  • 1 (5-count) package of Johnsonville Bratwurst 
  • 5 large yukon gold potatoes
  • Cleveland Kraut, Gnar Gnar or Beet Red
  • 5 hoagie rolls
  • Coleslaw
  • 2 tablespoons of olive oil

Instructions

  1. Preheat oven to 400 degrees.
  2. Clean potatoes well. Using the crinkle cut knife, cut 5 large potatoes into fries.
  3. Line a baking sheet with the cut french fries. Drizzle olive oil and sprinkle salt on potatoes. Bake for 45 minutes.
  4. Prepare Johnsonville Brats according to the package instructions.

  5. Once Johnsonville Bratwursts are cooked thoroughly, remove and place in hoagie rolls.

  6. Remove baked fries from oven. Add on top of bratwurst.
  7. Add your choice of slaw or sauerkraut.
