  • Even though it’s been roughly 90+ degrees and humid out, I’m happy to see that Autumn is right around the corner! The arrival of Pumpkin Spice Lattes can only mean one thing, right? I love seeing the Halloween decorations out in stores and other signs that the seasons are changing.
  • It feels like as the seasons change, things are going to start getting real! First we have my birthday at the beginning of October, followed by Ari’s THIRD birthday (holy smokes!), then Halloween, followed by Thanksgiving, and shortly thereafter is Christmas, and then New Years Day, and then the arrival of Baby Girl. HOLY SMOKES. Bring it, life! 🙂
  • I’m playing in my husbands College Football Pick’em league for the second time. The first year I played I beat every. single. person. My strategy? Go down the spread and choose “Win. Lose. Win. Lose.” and randomly assign confidence points. And after just one week in this year? I’m in the lead by thirty freaking points. 🙂 And yes, I’m totally rubbing it in his face already.
  • This weekend was so beautiful. It rained nearly the entire weekend, which made it ABSOLUTELY LOVELY. Bonus? I felt amazing! We pretty much just stayed indoors and watched movies & ate comfort food (I’ve been on a MAJOR soup kick as of late).
  • I may have spoken a tad bit too soon by saying I felt “great.” No sooner did I schedule yesterdays blog post did I end up throwing up pretty much nonstop. Yet again. Ughhh. Seriously, pregnancy!? OVER it. I can’t tell if I have a bug or if the hyperemesis hasn’t quite run its course. Either way, I’m discouraged.
  • Before I came down with this pregnancy plague again this weekend, I cleaned the house from top to bottom! And I even made my favorite Nutella Mascarpone Fillo Dough Bites! It’s been a couple of years since I made them, but they are just as delicious as I remember!

A Valentines Day Treat!

My Pinterest obsession strikes again.

This time in the form of Cake Batter Rice Krispy Treats.

They are delicious. And definitely a great Valentine’s Day treat!

Cake Batter Rice Krispy Treats Recipe:

Ingredients:
3 Tbsp of butter
1 (10 oz) bag of mini marshmallows
1/2 Cup of dry yellow cake mix
6 Cups of Rice Krispy Cereal
1 (1.75 oz) container of rainbow sprinkles

Directions:
Melt the butter in a large pan over low heat and slowly add the marshmallows in until they begin to melt.
Add in the dry (unprepared) cake mix evenly and slowly,
making sure it’s combined well with the butter/marshmallow mixture.
Stir in the cereal until it’s evenly coated with the mixture.
Then add half of the container of sprinkles into the mix; fold in until even.
Press into whatever baking dish you have handy
(for whichever thickness you prefer!)
and top with the rest of the rainbow sprinkles.
Let cool for about 30 minutes before cutting (and serving to your Valentine!).

Enjoy!

Sunday I baked my little heart out, so obviously I have a new cookie recipe to share with you.

Before we get started I’m going to advise you of something: if you want to keep your sanity, do not double this recipe. 
I had to learn the hard way. This recipe was supposed to yield 38 cookies. I never believe the recipes because I never seem to get as many cookies as they say. Needless to say, I should have listened this time. Because I ended up with seven.dozen.cookies. True story.
Anyways, on to a delicious chewy sugar cookie recipe!

Ingredients:
2 1/2 cups all-purpose flour, spooned and leveled
1 1/2 teaspoons baking powder
1/2 teaspoon kosher salt
1 cup (2 sticks) unsalted butter, at room temperature
2 cups sugar
2 large eggs
1 teaspoon pure vanilla extract
Directions:
1. Heat the oven to 350 degrees. In a medium bowl, whisk together the flour, baking powder, and salt.
2. Using an electric mixer, beat the butter and sugar on medium-high speed until it’s fluffy. Beat in the eggs one at a time. Then add the vanilla and reduce mixer speed to low. Gradually add in the flour mixture. Be sure to mix until just combined and not to overmix!
3. Roll dough into small, round, dough-balls and place onto parchment paper covered baking sheets.
4. Bake for 12-15 minutes or until barely golden at the edges. Place on cooling rack and enjoy!

If you are baking for an army, then go ahead and double the recipe! Share and enjoy!

my mom’s cut-out cookie recipe.

Every year as a child, our house would be full of baked goods from Thanksgiving through New Years.

My mother is a baker. She always has been. And since before I can remember, I’ve been her little apprentice!

So this year I finally asked my mom for her christmas cut-out cookie recipe. This is the one type of cookie I remember spending hours and hours making every year; and it’s the same cookie that makes it really feel like christmas!

I knew that these cookies were semi time consuming, so I doubled the recipe from the start. The recipe, as listed below, is not doubled. But I would recommend doing so. 

My Mom’s Christmas Cut-Out Cookie Recipe:

Ingredients:

2 1/2 Cups of all-purpose flour
1 Cup of butter
1/2 Cup of white sugar
1 Egg
1/2 teaspoon vanilla extract

Directions:

1. Cream the butter until light. Gradually add the sugar and beat until light and fluffy. Beat in the egg and extract.
2. Gradually blend in the flour. Shape into a ball. Cover with saran wrap for at least one hour {bakers note: I left mine in the fridge for two days because I was doing other things. I came back to it when I had time. They were still delicious!}
3. Preheat oven to 350 degrees.
4. Roll dough out on a lightly floured surface to 1/8″ thickness. Cut into desired festive shapes. Place cookies on parchment paper covered baking sheets.
5. Bake for 8 – 12 minutes or until golden. Remove from cookie sheet and place on wire rack until cooled completely. Decorate as you wish!

I really did love this recipe and plan on making them again before the holidays! Enjoy!

I don’t know if I’ve mentioned this in the past, but I come from a baking family.
My mother is a baker. She has been since before I was born. Wedding cakes, graduation cakes, cookies, cannolis {yum!}. You name it. She bakes them.
I attribute this to my love of baking.
Make me cook dinner, I freak. Tell me you are craving cookies from scratch, I’m on it.
So I’m sharing with you one of my favorite new Oatmeal Cookie recipes. These were so good, they were gone in just a few days.
Ingredients:
* 1 1/2 cups all-purpose flour, spooned and leveled
* 1 teaspoon baking soda
* 1 teaspoon ground cinnamon
* 1/2 teaspoon kosher salt
* 1/8 teaspoon ground nutmeg
* 1 cup (2 sticks) unsalted butter, at room temperature
* 1 cup packed light brown sugar
* 1/2 cup granulated sugar
* 2 large eggs
* 1 teaspoon pure vanilla extract
* 3 cups old-fashioned rolled oats (not quick-cooking)
* 1 1/2 cups raisins
Directions:
  1. Heat oven to 350° F. In a medium bowl, whisk together the flour, baking soda, cinnamon, salt, and nutmeg.
  2. Using an electric mixer, beat the butter and sugars on medium-high speed until fluffy, 2 to 3 minutes. One at a time, beat in the eggs, then the vanilla. Reduce speed to low and gradually add the flour mixture, mixing until just combined (do not overmix). Mix in the oats and raisins by hand.
  3. Drop heaping tablespoonfuls of the dough onto baking sheets, spacing them 2 inches apart.
  4. Bake, rotating the baking sheets halfway through, until golden, 12 to 14 minutes. Cool slightly on the baking sheets, then transfer to wire racks to cool completely. Store the cookies in an airtight container at room temperature for up to 5 days.
These cookies are amazing and worth the time it takes. Don’t take my word for it, try the recipe out yourself!

weekend wrap up.

Last week was a stressful week in the It’s A Hero household. It’s amazing what two misbehaving dogs will do to an already jam-packed week.
If you guessed they cause stress and exhaustion, you would be correct.


So Friday night BF and I got out of the house and went to dinner at Parasson’s Italian Restaurant in Stow. This is one of my favorite Italian restaurants!
I ordered the baked ravioli and I was so immersed in my food
that I couldn’t tell you what BF got
{but I’m pretty sure it was rigatoni something or other}.


We made it an early night cause Saturday morning was race day!
I headed to Hartville, Ohio for their 1st Annual Cannonball 5k Run!
While I have been training all summer, I was terrified to run this race.
The last race I ran was in 2007.
Plus BF was not running this race with me, so I was flying solo
{he badly sprained his ankle so he’s been laid up from it for two weeks}!

I came in 4th place for my age group, 10th overall female, and finished at 25 minutes 38 seconds! I may not be breaking records anytime soon, but I was pretty proud of myself!
{even if I almost threw up at the finish line – ha! That’s no joke.}

I spent the afternoon in a food coma and sleeping.
It was just what my body needed!

After I recovered, I threw together some gluten-free cupcakes and put myself together for a Halloween party at the neighbors house.

For the party, I dressed up as a flapper
{great excuse to wear a dress I bought from Express}
and BF dressed up as a Biggest Loser contestant, post weight loss!

I ended up taking my wig off shortly after some young kid
asked me if I was Lady Gaga…
He had no clue what a flapper was. Oh well.

Sunday I caught up on all many of the things on my to-do list!
Unfortunately not everything got crossed off my list,
but such is life!
