Easy Sausage Corn Dog Bites

Well it’s officially Fall. And our schedules aren’t any less busy than they were a few months ago. Heck, at this point, I am certain our schedules will never be less busy. Well, not at least until these kiddos are grown. So for now we will do all of the easy meals. These easy sausage corn dog bites check all of the boxes for our busy (and picky!) family.

Why use an air fryer?

The two greatest culinary inventions (well, at least for busy parents) are the Instant Pot and the air fryer. I know some folks will disagree and say that the crockpot or slow cooker reigns supreme, but a slow cooker can’t make dinner in minutes. And that’s why these two cooking gadgets win the prize.

Time is a hot commodity for everyone. I would argue that it’s especially true for parents. Between working, school work, extracurriculars, and whatever else families have going on, they need dinner as quickly as possible.

What you’ll need

My alternate title to this recipe would be “Four Ingredient Kid-Friendly Dinner.” This super easy, super delicious recipe consists of four simple ingredients. All you’ll need is the following:

  • 2 boxes of jiffy cornbread mix
  • 2 eggs
  • 1 cup of milk
  • 1 – 13 ounce package of sausage: andouille or kielbasa

That’s it. Easy peasy. And truly an ‘in-a-pinch’ recipe you can throw together on a busy weeknight.

Sausage Corn Dog Bites

Sausage Corn Dog Bites
Prep Time 3 hours 10 minutes
Cook Time 10 minutes
Total Time 3 hours 20 minutes

Ingredients

  • 2 boxes of jiffy cornbread mix
  • 2 eggs
  • 1 cup of milk
  • 1 - 13 ounce package of sausage: andouille or kielbasa

Instructions

INGREDIENTS -

  1. In a mixing bowl, add the jiffy mix, eggs, and milk. Mix well until the batter is smooth. 

    While the box mix lists 1/3 cup milk per box, I like to add a little extra as it creates a less dense result.  
  2. Slice the sausage into 1” pieces.  
  3. Place each sausage piece into a cupcake liner.
  4. Pour cornbread mix into the liner until sausage is just barely covered.  
  5. Place liners in air fryer basket and cook at 325°f for 10 minutes.  
  6. Remove and let cool before serving.
      
  7. ENJOY!

Easy Homemade Blueberry Lollipops

After the busy holiday season, with all of the extra candies and cookies and treats, I *try* to start the year off by starting fresh. Part of that means being mindful of what meals we eat. Now, I’m not saying that it’s perfect — because it certainly is not. In the last two weeks we’ve had pizza takeout twice. It’s about making small changes in moderation. Hopefully some of it will stick around. One of my favorite ways to make changes is by trying my hand at from-scratch recipes. These easy homemade blueberry lollipops are a simple way to try your hand at making candies for your family.

What you’ll need

This recipe is a little different than others I’ve shared. It requires a candy thermometer. If you haven’t used one before, no worries. I swear it’s not as complicated or as intimidating as it sounds. Try the one I’ve linked above — it has a handy clip for the side of your pot!

Besides that you’ll need lollipop sticks, a lollipop mold, and the following ingredients:

  • sugar
  • water
  • light corn syrup
  • cream of tartar
  • Blueberry Flavoring
  • blue Watkins natural food Coloring

Tips to make these easy homemade blueberry lollipops

Before you get started, you’ll need to know a few things. First and foremost, prep everything in advance. If you plan on saving the lollipops for later, be sure to have corn starch off to the side and ready.

Otherwise, I promise the recipe and steps are very straightforward. And you’ll love the results!

Easy Homemade Blueberry Lollipops
Prep Time 5 minutes
Cook Time 15 minutes
Additional Time 15 minutes
Total Time 35 minutes

Ingredients

  • 1 cup sugar
  • 6 tablespoons water
  • 1/3 cup light corn syrup
  • 1/16 teaspoon cream of tartar or half of 1/8 teaspoon
  • ½ vile of Blueberry Flavoring
  • 25 drops of blue Watkins natural food Coloring

Supplies

  • 12 lollipop sticks
  • Lollipop mold
  • Candy thermometer

Instructions

INGREDIENTS -

  1. Prepare your lollipop molds by placing them on a flat counter near your saucepan so the transfer is quick. Add your lollipop sticks to your lollipop mold.
  2. In a saucepan, add sugar, water, corn syrup, and cream of tartar. Mix.
  3. Place the hook of your candy thermometer to the side of your saucepan.
  4. Bring all your ingredients to a boil, mixing often with a wire whisk.
  5. Continue to whisk until your candy thermometer reaches the temperature of 260°F. Add in your blueberry Flavoring and Food Coloring. Whisk.
  6. Remove your saucepan from heat once your thermometer reaches 275°F. Immediately pour the ingredients from your saucepan and evenly distribute them into the cavities in your silicone molds. Make sure to pour over the sticks as well.
  7. Allow them to sit and cool.
  8. Once cooled, pop out and enjoy!

Notes

To store, you can individually wrap them in plastic, or dust them in corn starch and place them in an airtight container.

Easy Hershey Kiss Pretzels

I’m just going to say it. I am beyond thrilled to say that my kids are back in school. Sure, we had a great run with homeschooling. But I truly am so happy that my kids are getting back into a much needed routine. I’ve tried to make this adjustment period a bit more special to them than our everyday life. One super simple way to do that is through food. These Easy Hershey Kiss Pretzels are simple, delicious, and the perfect after school treat.

What you’ll need

This after school snack is so easy. Truly the one issue I seem to run into is the local stores not having the snap pretzel squares in stock. They really are the only pretzels that will work for this! Sometimes it’s just easier to find them on Amazon.

  • 24 Snyder Of Hanover’s Snap Pretzels
  • 24 Hershey Kisses
  • 24 M&M’s

Obviously, I keep extra hershey kisses and M&M’s on hand. Especially because there are little hands assisting me in the kitchen. And if I only had 24 of each available, these would never get made properly.

Ingredients

  • 24 Snyder Of Hanover's Snap Pretzels
  • 24 Hershey Kisses
  • 24 M&M's

Instructions

INGREDIENTS -

  1. Preheat the oven to 215° F.
  2. Place pretzels in a single layer on a baking sheet.
  3. Unwrap each Hershey Kiss and place in the center of each pretzel.
  4. Bake in the oven for 6-8 minutes until the kisses begin to melt (they'll become shiny and begin to deform), remove from the oven.
  5. Immediately (and carefully) place one M&M on top of the melted Hershey kiss.
  6. Allow to cool completely before serving.

    Easy Homemade Philly Cheesesteaks

    One of my favorite comfort meals of all time is philly cheesesteaks. It’s not a meal I grew up eating, but one I learned to love after heading to college. My (now) husband and I made it all the time when we were dating. And it just kind of feels like home, if you know what I mean. If you don’t make it often, it may seem daunting. But these easy homemade Philly Cheesesteaks are going to blow your mind. I promise, they are simple!

    Here’s what you’ll need

    For this recipe in particular, you’ll just need a pan for the stovetop. However, if you want to really finish this sandwich off properly, an air fryer is perfect. If you still haven’t invested in an air fryer, I recommend this one.

    Here are the other ingredients you’ll need:

    • 14 ounces of Shaved Steak
    • 1 onion, sliced
    • 8 ounces of baby bella mushrooms, sliced
    • 8 slices of Provolone Cheese
    • Mayonnaise

    That’s it! It really is only 5 ingredients. And it takes just minutes to prep.

    Ingredients

    • 14 ounces of Shaved Steak
    • 1 onion, sliced
    • 8 ounces of baby bella mushrooms, sliced
    • 8 slices of Provolone Cheese
    • Mayonnaise

    Instructions

    INGREDIENTS -

    1. In a large skillet, heat olive oil with onions.


      You want to sauté them on medium low heat until they become soft and translucent. I choose to do sliced onion, but you can totally dice them up as well!
    2. Once the onions have sautéd, add in the mushrooms.

      Be sure to season both the onions and mushrooms with salt. This helps to bring the moisture out of them and become soft. Not to mention, they need the flavor.
    3. Once the mushrooms have broken down and soft (they will turn a darker color) add in the shaved steak along with 2-3 tablespoons of your favorite steak seasoning. 

    4. Cook the steak until it’s cooked through, about 8-10 minutes. Make sure to toss the steak around in the onions and mushrooms.
    5. Grab your hoagie buns and place mayo on both sides of the bread.
    6. Place steak on top of the bottom roll and the provolone cheese on top.

    7. Place in an air fryer on 350° (or the oven) to toast the bread and melt the cheese. In the air fryer it’s about 1-2 minutes (if using the oven, expect 5-8 minutes).

    Easy Homemade Chocolate Pudding

    One of my favorite treats from my childhood was so simple. Pudding! It seemed like such a delicacy, despite being made from a box. As a mom I’m 100% guilty of not making enough of these types of treats. Which is maybe why my kids also think pudding is a ‘special’ treat. But I’ve also spoiled them even further by making this easy homemade chocolate pudding from scratch. They will never look at boxed pudding the same from here on out!

    Easy Homemade Chocolate Pudding

    What you’ll need

    This chocolate pudding is so easy to make and it only has 7 ingredients — most (if not all) of which you probably have in your pantry already. Here’s what you’ll need:

    • 6 tablespoons of flour
    • 1/2 cup of sugar
    • 6 tablespoons of cocoa powder
    • 2 Eggs
    • 3 cups of whole milk
    • 2 tablespoons of butter
    • 1 teaspoon of vanilla

    Optional ingredients would include whipped cream and chocolate shavings (for that extra ‘wow’ factor!).

    That’s it. No fancy pressure cooker or air fryer required for this one! I just know you will enjoy it as much as we have.

    Ingredients

    • 6 tablespoons of flour
    • 1/2 cup of Sugar
    • 6 tablespoons of Cocoa powder
    • 2 Eggs
    • 3 cups of whole Milk
    • 2 tablespoons of butter
    • 1 teaspoon of Vanilla

    Instructions

    INGREDIENTS -

    1. Add flour, sugar, and cocoa powder to a mixing bowl. Combine.
    2. Add eggs and mix until paste forms.
    3. Mix in the milk until smooth.
    4. Add mixture to a saucepan over medium heat. Continue to whisk until the mixture starts to simmer and thicken up.
    5. Remove from heat and add the butter and vanilla. Mix in until melted.
    6. Set in the fridge for 1-2 hours until the pudding has cooled and set.
    7. Serve with whipped cream and chocolate shavings.

    Easy Air Fryer Chicken Milanese

    It’s easy to get caught up in making the same old thing for dinner time and time again. I find myself in that rut frequently. I am the first to throw together tacos or burgers because it’s the first thing I think of. But I’m really trying to remind myself of other easy weeknight recipes. And this easy air fryer chicken milanese is the definition of the perfect busy weeknight recipe.

    Easy Air Fryer Chicken Milanese

    What you’ll need for this recipe

    In my house you’ll find two kitchen appliances that are in use daily (besides my coffee maker!) — my Instant Pot and my air fryer. The air fryer is perfect for the air fryer because it crisps the chicken up to perfection!

    Easy Air Fryer Chicken Milanese

    Here’s what else you’ll need:

    • 4 Chicken Breasts, sliced in half through the middle
    • Salt and Pepper, to taste
    • 1/2 cup Mayonnaise
    • 1 1/2 cups Panko Bread Crumbs

    That’s it! The only other thing you’ll want to have handy is some cooking spray. I use this avocado oil spray, but really any will do.

    Prep Time 5 minutes
    Cook Time 9 minutes
    Total Time 9 minutes

    Ingredients

    • 4 Chicken Breasts, sliced in half through the middle
    • Salt and Pepper, to taste
    • 1/2 cup Mayonnaise
    • 1 1/2 cups Panko Bread Crumbs

    Instructions

    INGREDIENTS -

    1. Pour bread crumbs into a shallow dish and set aside.
    2. Pat chicken dry with a paper towel.
    3. Place the chicken on a cutting board, then slice through the middle (as if you were to butterfly each chicken breast, but slice all the way through).
    4. Season chicken with salt and pepper.
    5. Spread approximately 1 Tablespoon of mayonnaise on one side of the chicken breasts.
    6. Place each chicken breast one at a time in the bread crumbs, then season and spread mayonnaise on the bare side. Flip over and coat the other side of the chicken breast with bread crumbs.
    7. Remove breaded chicken to a clean plate and repeat the breading process with all chicken halves.
    8. Spray tray of air fryer with cooking spray. Place breaded chicken in air fryer basket. Air Fry at 400° for 9 minutes (or until chicken is cooked to 165° internal temperature).
    9. Remove the chicken and ENJOY!
