{ easy chicken tacos }

January 29, 2013 in food,recipe

Remember how I said that my idea of cooking is picking up takeout or eating ice cream? Yeah, that’s pretty much true. If I do cook, it’s something that I feel confident I won’t screw up.

So for other amateur chefs out there, I figured I share my go-to weekday recipe [though, be warned, I did screw it up once – but I swear it wasn’t my fault! Our crockpot is a crock. 😛

Chicken Tacos - itsahero dot com2

Slow Cooked Spicy Chicken Tacos

Prep time 15 minutes
Cook time 8 hours
Total time 8 hours, 15 minutes
Meal type Main Dish

Ingredients

  • 6 Small chicken breasts
  • 1 jar hot salsa
  • 1 can Jalapenos
  • 4 tablespoons taco seasoning

Directions

Step 1
Put chicken breasts in crock pot.
Step 2
Empty jar of salsa into crock pot.
Step 3
Empty jalapenos & taco seasoning into crock pot.
Step 4
Stir ingredients (as much as possible).
Step 5
Cook on low for 8 hours.
Step 6
Chicken should shred easily with a fork.
Step 7
Once shredded, mix any leftover salsa into the shredded chicken.
Step 8
Use whatever type of shells strike your fancy (we've been on a soft corn shell kick around our house).

I promise that unless your crock pot cooks things on high regardless of setting [like ours], you cannot screw this up.

And I recommend pairing this with some of Chad’s Life Changing Guacamole. It offsets the heat from the jalapenos.

So yummy and easy! It’s the perfect weeknight meal that we are quickly working into our rotation of meals. Especially as we find our way through this time of transition!

Enjoy!

This is my favorite go to… If we don’t have anything or forgot to even defrost meat, I throw the chix in on low, and kick it up to high the last few hours, and all done. Mango salsa is what I like to add 😉

I will def. be making this since I don’t cook barely ever. I need simplicity.
