Sunday I baked my little heart out, so obviously I have a new cookie recipe to share with you.

Before we get started I’m going to advise you of something: if you want to keep your sanity, do not double this recipe. 
I had to learn the hard way. This recipe was supposed to yield 38 cookies. I never believe the recipes because I never seem to get as many cookies as they say. Needless to say, I should have listened this time. Because I ended up with seven.dozen.cookies. True story.
Anyways, on to a delicious chewy sugar cookie recipe!

2 1/2 cups all-purpose flour, spooned and leveled
1 1/2 teaspoons baking powder
1/2 teaspoon kosher salt
1 cup (2 sticks) unsalted butter, at room temperature
2 cups sugar
2 large eggs
1 teaspoon pure vanilla extract
1. Heat the oven to 350 degrees. In a medium bowl, whisk together the flour, baking powder, and salt.
2. Using an electric mixer, beat the butter and sugar on medium-high speed until it’s fluffy. Beat in the eggs one at a time. Then add the vanilla and reduce mixer speed to low. Gradually add in the flour mixture. Be sure to mix until just combined and not to overmix!
3. Roll dough into small, round, dough-balls and place onto parchment paper covered baking sheets.
4. Bake for 12-15 minutes or until barely golden at the edges. Place on cooling rack and enjoy!

If you are baking for an army, then go ahead and double the recipe! Share and enjoy!

I am loving all these recipes you are posting. And now I shall share my recipe for doctoring up any sugar cookie recipe: add a handful of white chocolate chips, a handful of nuts, 2 handfuls of dried cherries, and some amaretto liqueur. Delicious!!

I made gingerbread men last night. I burned them first because I used too short a man cutter, and second because I forgot I was baking them while I was online.
